Spud Fit!
Andrew Taylor has done an amazing thing.  Through research and taking matters into his own hands, he found a win, win ... win way to break food addiction.  And, he has even created the Spud Fit website to share his multiple wins with everyone. I am very impressed with his clear, logical thinking that took him on a one year potato only adventure to cure food addiction!  His success, however, far exceeded his original goal. Counting Calories
I used to believe that one's weight was a simple matter of calories in verses calories out and that calories are calories regardless of source.  However, over the years of Type-1 diabetes testing, logging and analyzing, I have learned that it is not that simple.  A major lesson learned is that carbohydrate calories and fat calories are processed and used differently: Fat is storage, Carbohydrates are fuel. Relatively early in my Type-1 diabetes adventure I discovered that a low-fat plant based diet was key to full health.  This discovery was due to a frantic effort in blood-sugar control for fear of all the debilitating complications that I had witnessed in other diabetics.  After discovering the elevated level of health provided by a low-fat whole food plant based diet, I expressed what I had learned to others.  However, no one accepted that such a diet would be good for them.  I explained the benefits of insulin sensitivity and how any fat calories over 10% and any animal products at all degrades it.  A few watched the Forks Over Knives documentary, but their reactio...

Blood-Sugar Simplified
While the biological mechanisms of blood-sugar control are indeed complicated, the basics are quite simple: blood-sugar is an equilibrium between supply and consumption.  Sugar, specifically glucose, is biology's primary fuel.  The drawing above illustrates how blood-sugar is a simple balance between sugar intake and the "burning" of it as a fuel.  Consuming foods from which sugar is extracted or synthesized is the fuel supply - represented in the left-hand scale pan.  The right-hand energy pan represents the sugar flowing in the blood stream ready for "burning" or conversion to energy.  As the sugar is burned, blood-sugar becomes lower.  Just as the fuel in you...

Don't Worry... Be Healthy!
Do you consider yourself health conscious?  Do you ever worry about getting enough nutrients?  It seems common for the health conscious to seek out foods with the best and most nutrients. In the beginning of my Type-1 diabetes journey, I was completely clueless about nutrition.  I knew of the words "protein" and "vitamins", but didn't really know anything about them.  I just knew what most everyone in my community believed - that meat was vital.  I didn't know an amino acid from an enzyme or a flavonoid from a protein, but I did find what foods made my blood-sugar control the hardest and which foods that made it the easiest.  Yes, I was (and still am) obsessed w...

Callie's Cancer

Callie's Cancer
Callie is a very dear member of our family.  She is a person who just happens to be a 14-year-old cat.  She plays a very prominent role in the family.  She supervises household work.  She loves (demands) loving time which includes being carried around the house lying on her back in my arms like a baby while petting my face with her paw.  She assumes the responsibility of alpha cat, keeping the boys; BJ and Blue-Eyes (also cats) in line with nothing more than a look.  Nothing more is needed, however, as she has everyone's unfailing respect.
