Does anyone have a favorite salad dressing recipe? I've got dozens of recipes on Pinterest, but haven't tried any of them. I'm helping a friend make the transition to WFPB and she was asking about dressings.

My wife makes one that changes just about every time she makes it. She calls it Happy Sauce because years ago she would put it on all the veggies she didn't like. Now she likes the veggies even without the Happy Sauce. Basically she puts a small amount of flax seeds and walnuts in a blender with some lemon juice. She never really measures so that is part of the fun. Then she adds in things for special flavoring like dried onion powder and garlic. She also likes putting in sage. Sometimes she puts in mushrooms, sometimes leeks... it varies. About the only thing that stays the same is some walnuts and flax and lemon. She then blends it up and it becomes very think and creamy. Most people seem to like Happy Sauce! :-)

By small amount we mean about one tablespoon of flax and one tablespoon of walnuts. Although to be honest with you I like this most when there are more walnuts and less flax. But, to each their own! :-) Some people do like the flax consistency a lot.

I make a honey mustard out of tofu, dijon mustard, apple cider vinegar and salt. I have been known to add a little olive or maybe just a few walnuts and blend it all up in my nutribullet.

Thank you Steve for sharing that recipe. I think I might try to create a variation on that theme using some soft tofu, a tiny bit of mustard powder, fresh lemon or lime juice, a bit of 'zest' of lemon or lime and maybe stir in a tiny bit of dill and some lightly chopped green olives just before serving... You are making me hungry! :-) I will try to let you know how it turns out. :-)
